2 pounds chicken, cut into 1-inch cubes
5 tbsp olive oil
2 tbsp tahini
2 tbsp sherry vinegar
3 carrots, grated
6 radishes, sliced
1/2 cup roughly chopped parsley
sesame seeds
1. Season the chicken lightly with salt and pepper and mix with 2 tbsp of olive oil. Turn the oven broiler to high and cook chicken for 10 minutes, stirring once or twice. Let cool slightly.
2. Whisk together the remaining olive oil, tahini and vinegar.
3. In a large bowl, mix chicken with carrots, radish and parsley. Drizzle dressing on top and mix well. Garnish with sesame seeds. Serve at room temperature or chilled.
